After the berries are sufficiently flattened and "mushed", they go to the stove to cook with a LOT of sugar. Here, a close up of the pot.
Fruit pectin is added shortly before the sauce is added to the jars. Catherine stirs while Andrea adds the pectin.
Ivan picks a packet of pectin and puts it in the pan.
Any foam from the jam should be removed prior to adding it to the jars.Andrea works quickly with the sticky mess!
