2 Dozen  Cookies

 

Chocolate-Chunk and Cherry Cookies

 
1 cup flour
3/4 tsp baking powder
1/8 tsp baking soda
1/8 tsp salt
1/2 cup plus 2 tblsp butter
3/4 cup dark brown sugar, packed
1 tsp vanilla extract
1 egg
8 oz semi sweet chocolate chunks
6 oz dried sour cherries (or dried cranberries)
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
 
Directions:
(Use big hunks of premium chocolate to make these chocolate-rich cookies extra special.) Preheat oven to 350 degrees F. Sift together the flour, baking powder, baking soda and salt into a bowl; set aside. Combine the butter, brown sugar and vanilla in a large bowl. Beat until fluffy with an electric mixer set on high. Beat in the egg. Reduce the mixer speed to low, add the flour mixture and mix just until incorporated. Mix in chocolate and cherries on low speed. Drop batter by rounded tablesppons onto ungreased cookie sheets. Space 2" apart. Bake until golden brown, about 16 minutes. Transfer to a wire rack to cool. Store in airtight container at room temperature for up to 4 days. Yum!
